Michael Collins

This cocktail honours Michael Collins, Ireland's national hero and the first Commander of the Free State Army.

Ingredients Knockeen Hills Poteen 70% abv - 60ml/2 fl.ozs. Lemon Juice, freshly squeezed - 30ml/1 fl.oz. Caster Sugar - 1 teaspoonful Soda Water Ice Maraschino Cherry Orange Slice Lemon Slice

Method

Stir the poteen, lemon juice, ice cubes and sugar in a tall glass until the sugar is dissolved. Top up with soda water, garnish with a cocktail stick with the cherry and twisted orange and lemon slices. If you can't obtain poteen you may substitute a high-strength vodka.
